Recipe: Sweet N Hot Jerk Chicken

My first trip to Jamaica was in 2015 when I attended the High Times World Cup. It was a trip that I will never forget. My now husband proposed on that trip and I was awarded my third cannabis cup. You can buy pretty much anything on the streets of Negril, food, beer, their local cannabis. One of my favorite treats from a street vendor next to our hotel sold Jerk Chicken. Honey Pot can be used to sweeten this delicious recipe and bring the irie vibes along with it! Enjoy!

Sweet N Hot Jerk Chicken
20 Chicken Wings
Lime Wedges

Jerk Marinade
(5 – 10mg Servings)
1 Inch Chunk of Fresh Ginger (peeled & grated)
2 Garlic Cloves (chopped)
Tops of 4 Green Onions (chopped)
1 Jalapeno, Habanero, or Scotch Bonnet Chili (deseeded and finely chopped)
1 TSP Fresh Thyme Leaves
2 TSP Ground Nutmeg
1 TSP Ground Allspice
1 TSP Salt
¼ Cup Honey Pot Honey (50 mg)
3 ½ Fl oz Apple Cider Vinegar
2 TBSP Extra Virgin Olive Oil

To make marinade, place all ingredients in a blender or food processor and blend to a paste. Put chicken wings in a bowl and pour marinade over wings, mix. Cover and allow to marinate in refrigerate for at least 1 hour.

Preheat oven to 375F, line baking sheet with parchment paper. Add chicken wings and spoon over marinade. Cook the wings for 45 minutes, spooning marinade over occasionally.

Serve hot with a squeeze of lime.
