Holiday Honey Pot Cookies

Spiced Honey Cookies

(About 40 – 2.5 mg Servings)

5 ½ Cups All-Purpose Flour, plus more for dusting

1 TSP Baking Soda

1 ½ TSP Salt

4 TSP Ground Ginger

4 TSP Ground Cinnamon

1 ½ TSP Ground Cloves

1 TSP Freshly Grated Nutmeg

1 Cup Unsalted Butter, room temperature

1 Cup Granulated Sugar

2 Large Eggs

½ Cup Honey Pot (100mg)

1 Cup Honey

 

Whisk together flour, baking soda, salt, and spices in a medium bowl. Beat butter and sugar in the bowl of an electric mixer fitted with the paddle attachment at medium-high speed until fluffy. Add eggs, 1 at a time, beating well after each addition. Beat in Honey Pot and honey. Reduce speed to low. Gradually add flour mixture and beat until just combined. Divide dough into 3 portions and wrap each in plastic wrap. Refrigerate at least 1 hour before using. Pre-heat oven to 350 degrees. Roll out dough onto floured cutting board. Use cutters to cut out the dough. Bake for about 12 minutes. Cool on cooling rack. Enjoy on their own or with icing!
